In the filter by time, TODAY is good, NEXT WEEK is good, but how about the ability to filter TODAY THROUGH NEXT WEEK, or better yet, TODAY PLUS X DAYS?

At the moment VIP Team To Do List doesn't have such feature. However, thank you for your suggestion. I have added your suggestion to our feature request list and this feature will be developed and added to our product in one of the next updates.
